Everything begins with the raw material. Even the world's best roaster cannot make great coffee from poor-quality green beans. Bean density, moisture content, and size all directly affect how the coffee responds to heat. For example, a dense Kenyan coffee grown at high altitude requires a completely different roasting approach than a softer Brazilian bean.

The Coffee Roasting Process Step by Step

Once high-quality green coffee beans have been selected, the transformation can begin. We roast in small batches to maintain complete control over the process and ensure consistent results. While every roast has its own story, the fundamental stages remain the same.

1. Drying Phase

The roast begins when room-temperature green beans are dropped into a hot roasting drum.

During the first few minutes, moisture evaporates from the beans, and their color changes from green to yellow and eventually to light brown. The aroma in the air resembles freshly baked bread or popcorn.

Although this stage sounds simple, it is critical. Drying too quickly or too slowly can compromise the entire roast.

2. Maillard Reaction and Caramelization

Once the moisture has evaporated, rising temperatures trigger a series of chemical reactions inside the beans.

The most important of these is the Maillard reaction—the same process responsible for browning steak or bread. Amino acids and sugars react together to create hundreds of new flavor and aroma compounds.

At the same time, sugars begin to caramelize, adding sweetness and depth to the coffee. The beans darken further, and their surfaces become smoother.

3. First Crack

This is the most dramatic moment of the roasting process.

Internal pressure inside the bean increases until it audibly cracks open. The sound resembles popcorn popping. First crack signals that a light roast has been achieved.

From this point onward, the roaster must be extremely attentive because the coffee's flavor profile develops rapidly, often within seconds. All of our freshly roasted coffees are roasted at least to this stage.

4. Development Time

The period between first crack and the end of the roast is known as development time.

Its duration is one of the most important factors influencing the coffee’s final flavor.

A shorter development time highlights fruity, floral, and bright characteristics associated with lighter specialty coffee roasts.

A longer development time reduces acidity, increases body, and emphasizes notes of chocolate, nuts, and caramelized sweetness.

Dark roasts continue further toward second crack, but in specialty coffee roasting, the process is almost always stopped before that point. This preserves the bean’s unique origin characteristics rather than allowing roast flavors to dominate.

The Roaster’s Senses and Expertise

Modern roasting machines are equipped with sophisticated sensors and software that monitor temperature, airflow, and time. However, these tools are only part of the equation.

The final decisions always belong to the roaster.

If beans cool too slowly, they continue to develop and can lose clarity and vibrancy in the cup.

However, coffee is not ready to drink immediately after roasting.

The beans begin releasing carbon dioxide in a process known as degassing. This process continues for several days, which is why coffee that is extremely fresh is not always at its best.
